The other night I was craving indian food but that usually comes with heaping piles of basmati rice and naan bread stuffed with cheese and curried potatoes, starting to drool thinking about it. Well as I'm trying to loose a few pounds still I needed a lighter alternative to squash the terrible craving, enter my husband's recipe for homemade indian food. Being Italian you wouldn't expect him to make a delicious indian dish but it's one of his many hidden talents.
This time we took a different spin on his traditional chicken and zucchini curry by using Sharwoods jarred tikka masala sauce.
He started the dish with some sliced onions and cloves of garlic sweated in a bit of olive oil.
While the onions and garlic sweat it out he we decided chickpeas (garbanzo beans) would be an interesting addition to the dish.
He prepared the zucchini but slicing in little sticks (like my spiderman glass with the matching red straw)The chicken was cut in thin strips as well
Once the onion and garlic are limp you can pick out the cloves of garlic and discard them.
Add the zucchini and and chickpeas and cook until tender then toss the chicken in and cook for about 5 more minutes.
Then dump the jar of sauce on and mix it all up, cover with a lid and cook for another 10-15 minutes.
In the end you have a yummy tikka masala mixture of chicken and veggies. Of course this would be delicious served with rice but it was just fine by itself.

Super easy to make especially using the jarred sauce from sharwoods, they have lots of flavors I want to try a chicken jalfrezi next.
