Healthy Huevos Rancheros

Last night I tried another new recipe from the cooking channel and good housekeepings lose 5 lbs but I made some changes so it was a little different.



1/2 an onion diced and 2 cloves of garlic in big skillet over medium high heat with a bit of olive oil until it just starts to brown then add cumin and hot sauce


1 can of diced tomatoes drained, 1 can of black beans drained and rinsed, and chopped fresh cilantro


Eggs, cumin, and hot sauce


The total combined veggie mix with seasonings



On my plate a crispy whole wheat tortially, veggie mix, one over easy pan fried egg, 1/2 a slice of white cheddar cheese torn up and spread over the tortially, sliced avocado, more fresh cilantro, and a bit of some light sour cream.
This meal was my favorite from what I've cooked so far this week, I will keep this one in the recipe rotation, except for the fresh cilantro I usually have this stuff available in my fridge and pantry.

Ingredients

Directions

cook onion and garlic until it starts to brown add cumin and hot sauce give a stir add diced tomatoes cook 3 mins add black beans and cilantro and salt cook until heated thru
warm 4 tortillas in a skillet
place bean tomato mix on tortilla top with pan fried over easy egg and optional toppings
cheese
sour cream
avocado
cilantro

I've been using this site for about 2 weeks, usually it's difficult to track calories but with the recipe maker you can put all the ingredients in the the calculator for what you are making and how many servings and it will tell you the total nutrtion per serving of the dish you just made and are going to chow down on. They also have an app for the phone but this is not free, however I feel it's worth the $3.99.
